This is the new crop from a coffee called project X. Project X is a special anaerobic fermentation project with our friends from Fazenda Pinhal, Brasil. Last year Fazenda Pinhal won the prize for the most sustainable coffee farm in Brazil. Anaerobic means that the coffee is fermented in a sealed, airtight tank. Only specific types of microbes survive without oxygen and those tasty microbes affect the coffee’s end flavour. After picking the cherries have been moved into tanks to macerate for 48 hours. Cherries are then dried with the pulp to achieve maximum sweetness and body.
