We met Ana in World Of Coffee 2019 in Berlin and were blown away by the coffees she presented. This coffee is small lot seperated by the coffee cherry picking dates. For three days coffee cherries are picked and the days picking is thrown into a fermentation tank to ferment on top of the previous days picking. Cherries are fermented in layers and washed right after on the 4th day. This fed-batch fermentation yields a fruity and bold berry bomb flavor in the cup. Rich in candy-like sweetness and crisp red apple acidity.
